Brief Abstract: This work aims to understand the effects of specific food ingredients on the processibility of soy-protein-based formulations into fibers. Rheological investigations conducted suggest relations between flow characteristics and fiber forming. Fibers thus produced would be used to construct imitations of animal skeletal muscle to produce meat analogs from plant-based ingredients.
